Recipe: Easy Vegan (Nachos) 'Cheese'

Today I have a VERY exciting recipe for you guys! I am a huuuuge nachos lover but nachos.. not so vegan. I know you can just use salsa only but it is just not the same. It is the creamy cheese I love about them. So here I have a delicious recipe on a substitute for cheese and spoiler: It is THE best thing ever!! I am dead serious. Mmh just the thought alone. It is so good and as the title says: it is easy and it is vegan so let's get started!
You will need: 
½ cup cubed potatoes
½ cup cubed carrots
1/4 cup oil
1/4 cup non-dairy milk (you can also use water)
2t tsp lemon juice
1tbsp tomato paste
1½ tsp arrowroot flour or starch
1 tsp garlic powder
1 tsp onion powder
1½ tsp (sea) salt

If there is too much of it then just store it in the fridge and heat it up in a pot with some water and it is good to go! A life without regular cheese is not so bad after all because this is better. And trust me on this one because I used to absolutely love(!) cheese.
