Garlic Oven Baked Mashed Potatoes

I am not the biggest fan of mashed potatoes, to me it is just very boring and plain but bake it in the oven and I absolutely love it. There is just something about the brown crispy crust that make me come back for more. Oven baked mashed potatoes is the perfect meal along with a good salad or use it as a side dish for the curry veggie cauliflower rice or literally anything else. It is incredibly easy to make, making it the perfect lazy meal to enjoy on a day where you want to spend zero effort.
This recipe is for one person and takes about 1 hour and 15 minutes to make.

1 kg potatoes // 3 Ib 3 oz. potatoes
The cooking water from the potatoes
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. Himalayan salt

Preheat the oven to 200 degrees Celsius // 400 degrees Fahrenheit.

Peel the potatoes and cut into small cubes. Boil the potatoes in water for 10 - 12 minutes until tender.

Pour the potato water into a bowl and set aside.

Mash the potatoes. Stir in onion powder, garlic powder and salt with a bit of the water from the potatoes. Add water until you get the desired consistency. The mashed potatoes should be thick rather than thinner.

Season with salt. 

Place the mashed potatoes into a refractory tray and bake it in the oven for 30 - 45 minutes until the surface is crisp and golden.
