Vegan Apple Cinnamon Cookies // Recipe Week

We are diving into the sweets this week and I love it! Having the house smelling like freshly baked cookies is one of the most homey feelings in the world to me. If I'm being honest, cinnamon was not my favorite flavor but that has really changed since I went vegan and in combination with apples, I can't get enough! Day four of Recipe Week, we are going to make delicious apple cinnamon cookies so why not just get started?:

Ingredients for 10 cookies:
1 red apple
100g // 1 cup desiccated coconut
40g // ½ cup coconut flour
1 tsp. Ceylon cinnamon powder
200g // 1 ¼ cup Medjool dates, pitted

Preheat the oven to 200 degrees Celsius // 400 degrees Fahrenheit. 

Mash the dates with a fork or with your fingers.

Place the dry ingredients in a bowl and mix well.

Grate the apple coarsely and add it to the bowl.

Add the dates and use your hands to combine the dry ingredients with the dates.

When combined and the dough sticks together, roll about 3 - 4 tbsp. of the dough into balls and press them flat between your palms and fingers. Do not press the balls too flat – approximately 1 cm. thick is good. If the dough is too sticky, wet your hands a bit to make the dough easier to work with.

Place the cookies on a baking sheet lined with baking paper and bake them in the oven for 8 - 10 minutes.

You can enjoy the cookies hot or allow them to cool on a grate. Once completely cold, you can store them in an airtight container up to two days at room temperature
