My Favorite Vegan Snacks

I absolutely LOVE snacks and I make sure to do a lot of snacking during the day to not go down on glucose which is what fuels our brain and body. Not only are these snacks great when you are in the need of some energy but they are also amazing as treats for whenever you feel like it. They are packed with amazing benefits and you do not have to be careful of how much of it you eat.

Apples with date dip: Is so delicious and such an easy snack. Place around 15-20 dates in a mini chopper or a food processor with 1-2 tbsp. water, the flavor of your choice - I like to add 1/2 tsp. vanilla powder to make a caramel dip - and blend it smooth. Cut up a few apples and you have a delicious and easy snack. Dates are incredible if you have sleep problems so you can safely enjoy this before bed as an evening snack.

Melon, specifically honey dew: cut a melon in half, scoop out the seeds, throw in a spoon and you are good to go. Some people would probably call fruit as a snack boring but I really love it! Especially if the melon is perfectly ripe and sweet. I love pretty much all types of melon but watermelon - I have heard that watermelon with a squeeze of lime juice on top should be amazing, definitely something I need to try - and especially honey dew are my favorites.

All the different bliss bites: There are so many bliss bite recipes out there and they are all so amazing and so easy to blend together. If you make a large batch you can save them in your fridge and snack on them during the day. They will last up to 4 days in the fridge. You can also freeze them and eat them from the freezer when you are craving.

Strawberry and orange smoothie: this is my go to snack when it comes to smoothies. I absolutely love drinking smoothies when I need energy because they are literally energy bombs when filled with fruit. This smoothie is so sweet, so satisfying and so easy to make. It is the perfect combination of strawberries and oranges that makes me return to it again and again.

Cucumber with hummus: If you are in the mood for a savory snack then hummus is your friend! Hummus is one of the best things to have ever been created so thank you to whoever had that crazy good idea. Hummus is typically made with chick peas but my favorite have to be the one my mother makes with sunflower seeds instead. It is SO good and such a great snack with cucumber sticks. 

Here is the recipe for the hummus:

1 cup sunflower seeds
Juice of ½ a lemon
1 clove of garlic
½ tsp. Himalayan pink salt
½ tbsp. paprika
1 handful of chopped Italian parsley
Around cup water

Soak the sunflower seeds in water for 2 hours or overnight. Strain away the water from the seeds and rinse the seeds well. Place in a blender along with the juice of the lemon, garlic and ¼ cup water. Blend until you have a nice smooth cr√®me. It may be necessary to scrape down the sides a couple of times and adjust the consistency with water. When you have the right consistency mix in the parsley, paprika and salt. Store it in an airtight container in the fridge for up to 4 days

Cookies: one of my absolute favorite things to do is bake - I love to eat it afterwards as well but the process of creating in the kitchen is something I find incredibly calming, exciting and something that get the creative vibes going for me. I have always loved cookies but for a few years I did not eat any because I did not eat refined sugar and gluten - But late last year I had an idea and I went for it. It resulted in the most amazing and easy(!) cookies ever!

(Organic) dried apricots: one of my absolute favorite foods I have 'discovered' during the past few years is apricots. They are amazing fresh but they are also the perfect snack as dried. Filled with iron and cobalt and so sweet, they are one of my absolute favorite snacks! Make sure the dried apricots are organic to make sure they are not treated with sulfur dioxide.
