Recipe: Vegan Cheese

This cheese sauce is the best cheese sauce I have tried! It's so incredibly good and I am currently eating it with everything. And not only is it incredibly good but it is also super easy to make using things you probably already have in your kitchen - what's not to love?? You can use this as a dip for potatoes like I did here or put it on pizzas, in wraps or however you like your 'cheese'.

If you want even more dips and spreads then you can check out my eBook filled with exactly that - click here to check it out. (Find the Danish version here).

Let's get into how it's made:

2 cups peeled and cubed potatoes (310 g)
1 tbsp. freshly squeezed lemon juice
1 tsp. Himalaya pink salt

And 1 tbsp. of this spice mix:
4 tbsp. paprika
2 tbsp. onion powder
2 tbsp. garlic powder
2 tbsp. marjoram
1 tbsp. oregano

Mix well and store in an airtight container in a dark cabinet.

Peel the potatoes and cut into cubes. Place in a pot with water and boil for 12 minutes until tender. Strain away the water and place the potatoes in the blender along with the rest of the ingredients.

Blend until smooth, season with salt and it's ready.

Store in the fridge. Either eat cold or heat up at low heat with some water to desired thickness.
