Christmas Peppernut Crumble (GF & Vegan)

Gluten free, refined sugar free and vegan Christmas treats recipes are not something you can easily find so one have to roll up their sleeves and get to work in the kitchen. Something that's really missing when working in the gluten free kitchen is getting that crunch that's so characteristic about many Christmas treats. But with this recipe it's definitely not missing so let's get into it:

2 - 3 servings  //  total time: 30 minutes + cooling time

2 cup almond flour (200 g)
6 tbsp. coconut flour
6 tbsp. potato starch
1 tsp. ground cardamom
4 tbsp. maple syrup
2 tbsp. water

Preheat the oven to 350 degrees Fahrenheit or 180 degrees Celsius.

Place the dry ingredients in a bowl and mix well.

Add maple syrup and water and knead into a crumbled consistency.

Distribute the mixture evenly onto a baking sheet lined with baking paper and bake in the oven for 8 – 10 minutes until golden brown.

Turn the temperature down to 300 degrees Fahrenheit or 150 degree Celsius and bake the crumble for a further 10 – 12 minutes with the oven door ajar.

If you don’t have an oven that allows you to place the oven door ajar, set the oven to hot air instead; it may take a few minutes longer.

Leave to cool on a grate. Store in a dry and airtight container.
